Main functions
Mixing of all ingredients: milk, fresh cream, powdered milk, sugar, dextrose, eggs, emulsifiers, stabilizers, etc.
Heating and sanitizing: melts fats & chocolate, eliminates the most of pathogenic bacterial flora.
Cooling and conserving: completes the pasteurization process, keeps the residual bacterial flora dormant and maintains the mix at the best temperature in compliance with the regulations.
Optional recording of the cycle and the
temperatures.
